From May to August 2013, the award-winning fine dining eatery invites guests to walk in the footsteps of lauded Executive Chef Rudi Liebenberg by indulging in a special four-course Winter Journey Menu. Designed to give diners a crash course in the famed maestro’s technique, style and philosophy, the offering – it includes canapés and tea or coffee – is nothing short of an extraordinary symphony of flavours.

With impassioned deference for locally sourced fare and the overall integrity of food, Rudi creates each elegant dish from a base of respect: respect for the ingredients, respect for the process, respect for the end product and respect for the guest.

The result is a menu that’s not only taken its maker on an inspiring journey, but that also sends visitors on a culinary expedition across the entire spectrum of cooking methods, from classical to modern.  Food fundis can look forward to inventive inclusions like Cold Smoked Salmon Trout with Celeriac Mayonnaise, Lentils, Buffalo Milk Labneh and Fennel or Pomegranate and Beetroot Glazed Springbok, Springbok Croquette, Beetroot Salad, Sweet Potato and Butternut Pavé. Do note, the menu evolves monthly, a commitment that reflects both Rudi’s fondness for change and his dependence on only the freshest raw materials.

What’s more, those intent on milking the personal, interactive experience for everything it’s worth can opt to add paired wines to the meal. The carefully curated list comprises only reds and whites made by responsible winemakers who, similar to Rudi, have a respect for the purity of the fruit they grow. Though, according to playful sommelier Carl Habel, “If patrons aren’t happy with a wine, we’ll bring out another...and another...and another...until they’ve got a smile on their face or they fall off their chair.”

The price for the four-course Winter Journey Menu is R325p/p; the wine pairing option, which includes an 100mL glass of wine with each course, is an additional R175p/p. The menu must be ordered by a minimum of two people and should be enjoyed by the entire table (meaning, if two people at a table order the menu, everyone should).
